How Much Sugar?

Malt Extract

    I was looking in my supermarket today for Rice Malt syrup, but instead found Malt Extract the only ingredient is "Extract of Malted Barley"  David says that Malt is good, so is this syrup ok? Gosh i hope so, i am thinking so, would be nice to have somthing to put on pancakes on sunday morning :D Can anyone guide me plz?? :D

    yes Malt extract is fine. I get the Saunders Malt extract from Franklins. Enjoy!

    yes Malt extract is fine. I get the Saunders Malt extract from Franklins. Enjoy!

    Thanks for that Freda, yeah that is the same brand i got, i put some in my hot milk last night....mmmmmmso nice.  I found powdered malt in the brewers shop too, will get some at some stage :)

    According to Saunders this is the breakdown

    SUGARS CONTAINED IN SAUNDERS MALT EXTRACT
    Approx.

    Fructose        2%
    Glucose         8%
    Sucrose         2%
    Maltose        44%
    Maltotriose   12%

    There's nothing to worry about with Maltose and Maltriose (both are simply combinations of glucose molecules).  Obviously the fructose is a concern and so is the sucrose (half fructose) ... so the thing is 3% fructose by weight which is the same as seeing 6g of sugar per 100 on the label. If you are only having a small amount then that is no big deal but if you are having lots of it a day (say more than 100g), then you'd probably want to cut back.

    Oh thank goodness! I just checked the can (before reading this post) and saw it had 49% sugar so wasn't sure if eating it is ok.

    i make a vanilla slice (chocolate slice minus the cocoa) and melt some saunders malt through with the butter. i melt a bit more butter than you need and keep that mix aside for the icing. When the slice has come out of the oven, I mix that butter (usually still melted cos the slice only cooks for 12-15 mins) and add some dextrose and water if needed as the icing. It is sooo yummy :)
