My cakes and muffins are sticking

    Hi Everyone,

    I've made a few of the recipes from the "Sweet Poison Quit Plan" and my muffins/cakes all stick to the pan or patty pans, to the point where I nearly had to throw one of my muffin trays out.
    Does anyone have any suggestions?  What could I be doing wrong?
    I'm not a bad cook (generally...ha ha), but using dextrose is very different and not getting me very good results in regards to this.

    Hi Julie,

    I've had no problems with the cakes and muffins sticking using both cake tins and silicone muffin pans however I did move the oven shelves lower so they weren't cooking at the usual higher heat. I believe dextrose burns at a lower temperature then normal sugar so I'm always wary of that. I also make sure I melt some butter and grease the tins well before use, although the silicone moulds don't seem to need this.

    This must be so frustrating for you - especially to lose a good muffin tray over it, I love my bakeware! Not to mention the mangled muffins :(

    I haven't had too many problems with my muffins.  I got just last week for the kids Dora cooking thing, and it came with 4 silicone muffin cases, they are really neat and I quite like them (first time I've cooked with silicone before I always use tins).  I have had troubles with paper cases though, they always tend to stick so I don't use them.  When I'm using my tins, I spray it with canola oil spray (the can stuff), it works a treat.

    Thanks so much for both of your suggestions.  I might give the silicone a try.  And maybe I need to cook them at a lower temperature then, I think my oven is a bit hotter than what the dial states.
    Not to worry, I'll have to have some more practice of baking....and eating!  ha ha
