    Tried the Rice Malt Biscuits on this website by Lizzie. They are fantastic, lovely and crisp, put some mixed spice in my first batch, will have to try ginger next time Thanks for a great recipe.

    I have also made them, and used ginger they reminded me of "brandy snaps", so next time will find an old wooden peg and see how good I can make brandy snaps

    This is a great recipe and super quick to make. I sometimes substitute the ginger with 1 tablespoon of good quality cocoa powder instead and it makes a great chocolate biscuit. The kids love them!

    I have also made the rice malt biscuits and they are super easy and taste great.  I usually whip up a batch when I need to have the oven on and pop them in at the end, cause they don't take long to prepare or cook.  I did try them with cinnamon as I am not a big fan of mixed spice or ginger, but will definitely try the coco powder.

    Thought I'd try to make the rice malt biccies with coconut - sort of worked, but think I'll go back to the original recipe. Added coconut oil instead of butter and half coconut flour and flour with a bit of desicated coconut added........not as exciting as I'd hoped....lol

    can you eat these while in withdrawal from sugar? im in my first week and i need something sweet!!

    I must have done something wrong, mine were so ordinary and I don't think I would try them again.

    I'm finding that I can get away with less glucose or rice malt syrup in David's recipes as I don't need things to be so sweet any more. I made the rice malt biscuits recently with minced real ginger. Fantastic and worth the slight extra effort!

    Feeling the same way! Mine didn't harden and just stayed soft and greasy I've just thrown the whole batch away :(
