Mmm Lunch (or dinner) - Simple Chicken and leek soup

    Hi again,
    I made this soup on Monday and had it for Dinner, but I just had leftovers for lunch today and it was very tasty.
    1 tablespoon Olive oil
    3 or 4 Chicken thighs - cut into smallish pieces
    1 leek - sliced
    1 side off a capsicum - diced
    1 stick celery - sliced
    1/2 to 1 carrot
    Salt & Pepper
    Pinch of dried chilli flakes
    Water (about 2 cups)

    Brown chicken in olive oil, add leek, stir around for a couple of minutes, whack in everything else, bring to boil then lower heat and let simmer for about 1/2 hour. You can put some pasta or rice in it if you want or have it with some bread or toast. It is good as it is, so if you're trying to lower your carbs just have it like it is.
    Like I said it had more flavour the next day but is a great thing to have if you are feeling hungry anytime.

    I use to make sticky chicken wings with BBq, tomato an soy sauce, an of course since being S/F havent made them, but was wondering what to marinade pork fillets in the other night when I tried a combo of tamari,rice m/s, crushed garlic,ginger an chilli, came out lovely so will try it on the chicken wings soon. Cant think why I havent used the rice M/S this way before now.

    Please forgive me if this is obvious and common knowledge but what is "rice M/S"? I too used to make sticky chicken wings and also marinated pork spare ribs but have stopped making these because of the honey and not sure what else to use. I would like to try your recipe for pork but I don't know what the rice M/S is. Can you help please?

    Hi Jenny   I believe that would be Rice Malt Syrup.  You can get it from Coles in the Health Food Section.
