I have recently modified this recipe to be sugar-free and have people raving about them.
Sieve - 5 cups flour, 4 tsp Cream of tartar, 2 tsp baking soda and 3 quarters tsp salt. Mix and add 2 - 3 cups tasty cheese.
Mix and add 1 - 300ml bottle of whipping cream and (original recipe is lemonade but I have changed it to diet tonic) 1 sm can - 330ml of diet tonic. Mix until it just comes together (do not overmix). Pat into large oblong shape - not too thin and cut into squares. Put onto a floured oven tray and bake at 220 deg for approx. 20 mins.
You could make plain scones if you don't want cheese but the cheese scones are delicious.
Does sugar really go into cheese scones? I shall have to read the labels more carefully.
