Oatmeal Cookies
Preheat oven 175C. Sift together 2 cups plain flour, 1 cup dextrose, 1 tsp salt, 1 tsp bicarb soda, 1 tsp cinnamon, 1 tsp nutmeg. Then add 2 cups rolled oats & 1/2 cup chopped walnuts. Combine & stir into flour mixture 2 beaten eggs, 3/4 cup peanut oil, 1/2 cup pouring cream,1/2 tsp vanilla. Drop by spoonful about 4cm apart on a baking tray lined with baking paper. Bake for about 15 - 20 minutes. Makes about 3 doz.
This is not a sweet biscuit - you could add more dextrose if desired.
They are also a soft biscuit.
Very high in fibre!
