    Aunty Mary’s scones

    2 cups milk

    1 cup cream

    4 cups self-raising flour (2 SR wholemeal, 2 SR white)

    2-3 tablespoons dextrose (in place of icing sugar)

    pinch salt (I don’t bother with this)

    Stir milk and cream together with spoon for one minute.

    Sift all the other ingredients (I don’t worry about sifting).

    Mix the wet and dry ingredients with a knife or spatula.

    Stir very lightly – just to combine.

    Spoon onto tray (with baking paper).

    Bake in a ‘hot’ oven for ten minutes.

     

    As 'snacks' are the hardest part of giving up sugar, I can recommend this recipe as very easy and freezes well.

    Tried this receipe yesterday. Way too much liquid { or not enough flour} turned out like pancakes?

    Back to the drawing board.  Anyone else tried it?

    Easy Scone recipe - no sugar

    2 cups self  raising flour

    1/2 teaspoon salt

    2 tablespoons butter

    ½ cup milk

    ¼ cup water

     

    sift dry ingredients;  rub butter in to flour mix; combine milk and water; add to flour mix with knife; knead on lightly floured board; cut into scone shape (I use a glass); brush with milk;   hot oven 10-15 min; serve with butter - no jam!

     

    Variations: for something sweeter ...

     

    add cooked sweet potato to the mix and crumble in before adding liquid (you may need to reduce the liquid a little.  Use left over sweet potato from last night's roast (with the added demension of garlic and other roasting flavours) or cook sweet potato with skin in foil  ...

     

    or ...

     

    use 6 dates crumbled into the basic recipe which makes 12-13 scones (i.e.1/2 a date per scone) which is not cheating too badly on the fructose count.

     

    or savoury ...

     

    add 3/4 cup grated tasty cheese and 1/2 teaspoon thyme to basic recipe ...
