How good is Frank's Strawberry ricotta cake?

    Hi all, just a note to let you know I made Frank's ricotta strawberry cake last wk and it is fabulous.  I took it to my sister's place for dessert and everyone loved it. Smiles Nancy

    Hi Everyone

    I also tried Frank's Strawberry Ricotta Cake for a family evening meal. It was greatly enjoyed and there were no leftovers!!! (no one knew of the special left out ingredient???)
    I did vary it a little and added some mixed berries (frozen) natural and this added some more flavour and juice.
    I do have one query re the recipe - it says in the method to "whisk"! does this mean to beat in a mixer, food processor or with a wire whisk?
    I used a mixmaster and it was fine but I just wonder at this wording - maybe it makes for a lighter mixture than a beater??? Lizzie can you help here?

    Lizzie's not sure what Frank means by Whisk ... so I've sent off an email to him to find out what he does ... I'll let you know.

    Bev ... Frank says he means to use a whisk (wire whisk), but if the mixmaster works, go for it!

    I have to say that I'm disappointed in the ricotta cake!   I made it yesterday - perhaps it's because I used fresh light ricotta rather than full ricotta.  But I don't think I'll make it again.

    I did use the full cream ricotta cheese (in a tub) and I also added about 3/4 of a cup of frozen natural berries with a little juice and this made a nice consistency. Probably did add more fructose than it should have but it sure was yummy. LOL (obviously only for special occasions)

    David - thanks for all the answers to my query re the wire whisk.
