    Quick Scones

    I have just used diet lemonade instead of normal and works well.  Top with whipped cream (sweeten with artifical) and fresh strawberrys.

    3 cups SR Flour, 300 ml cream and 300 ml lemonade.

    Mix all together with a knife, then turn out onto floured surface and press flat (about 2cm) then cut with scone cutter or floured glass.  Place close together on tray and cook in hot oven 10min.  Wrap in towel.  Freeze OK.

    I have tried the Diet Lemonade too for Lemonade Scones and works well. Then had the idea if one is not keen on using the Diet Lemonade with its additives using Mineral Water should still work as the fizzy bit is what gives them a lift. So I tried two different ways in a test run, just Mineral water and then adding a little dextrose. I used two small tablespoons. Dissolved the dextrose in the Mineral Water and works well and taste just as good and still light and fluffy.

    I made a batch of Mineral Water scones yesterday (with cream/flour/mineral water) and think they turned out better than my normal Lemonade scones. They were delicious! I then made another batch adding the zest of one lemon and a couple of frozen blueberries and WOW I was very impressed. I served them with cream (although some of my guests used jam). I don't think I'll ever go back Lemonade again! I didn't like the flavour of sugar-free lemonade and I'm trying to steer clear of artificial sugar. 

    I used the "Deep Spring Natural Sparkling Mineral water" which worked out well because I usually add a pinch of salt to my baking anyway and I found the water was salty enough that I didn't need it.

    Can you give me your scone recipe using mineral water and also with the berries I'm not a very good cook but I try

    I also do cheese scones.  Grated Parmesan, Soda Water, Cream and Flour.  YUM YUM !!!
