choc fudge?

    Has anyone made the fudge from the members section... 

    I have tried twice - it always come out nice but very cakey rather than fudgy. I am thinking it is perhaps meant tohave pl flour not sr??

    I made it and it turned out exactly like low, stale cake (quite dry).  But I'm not known for my baking skills!!

    Maybe no flour??   I am officially giving up on the fudge! 

    Hopefully someone else has better luck than me... and shares their secrets too!!!

    has anyone tried to make it using a normal recipe and replacing the sugar with dextrose??

    i can't yet, cos yesterday i made caramel so might wait a month or two (i still have issues with sweet stuff - one taste is never enough)

    Hi, I cook this "fudge" quite frequently but I've never got it looking or tasting fudgey at all. I drastically reduced the cooking temperature and time, and this causes it to turn out out like a dense, slightly sticky, moist chocolate slice/cake. So, if you think of it as a dense chocolate cake, rather than fudge, then it's very tasty!

    The recipe doesn't claim to be fudge per se, but rather choc fudge squares.  But I agree it's not fudgey at all, more like chocolate cake.  A friend of mine laughed when I described the problem, claiming you simply can't make fudge without sugar, but surely we can ...  Recipe anyone?

    Made some on the week-end from a recipe I came across on the internet (supposed to be a chocolate recipe but it turned out very fudgy & chewy)  The recipe is as follows:

    Place 1 cup of cocoa powder & 2 cups of milk powder in a bowl.  In a saucepan, place 2 cups of dextrose & enough water to liquify the dextrose (I used about 3/4 cup of water).  Stir over medium heat until dextrose totally dissolves & starts to thicken slightly.  Add small amounts of liquified dextrose to the cocoa & milk powder mixture until all liquid is thoroughly mixed with powder mixture.  Add small amounts of lukewarm water until mixture is about the consistency of melted chocolate.  Pour into moulds or a large tray (depending on how thick you want the fudge) & place in freezer for about 5-6 hours.  I lined my tray with glad wrap. 

     It was absolutely beautiful - the flavour is the same as real chocolate but it's a chewy texture.  Very simple to make.  Hopefully some of you might try it & let me know how it goes

    I was at a friend's place last week and almost got the chocolate fudge recipe I used to use (from the day to day cookery). Unfortunately, the book wasn't at her shed (where we were), but at her house (where we weren't ;) )

    Once I get it (will try google), I'll make it up. It is sugar (so will obviously replace that with dextrose), cocoa powder, milk, cream of tartar. not sure what else, if anything.

    How funny... I wish I had read this before trying the recipe. Anyway I added half a cup of cocoa, because we like our chocolate things to be chocolatey, and 3/4 cup of milk because it was never going to come together as it was, and I have a lovely light choc coconut cake.
