My poor darling husband has so willingly gone sugar free with me, but he really loves his sweet chilli sauce, and misses it so much.  I found a recipe that calls for 3 cups of castor sugar, would i replace the castor sugar with Dextrose?  Gonna give it a go, Sweet Chilli mayo is to die for as well (home made from whole eggs) so want to make that again as well!!  Will let you all know how it goes, or if anyone has any ideas? :) Thanks

If I were you I'd only make about a third of the recipe as things with dextrose in them don't keep as well as with sugar.

Unless you want to freeze it into portions.  It would keep like that.

i made some with dextrose and the end product looked like it had reverted to the powdered dextrose (white powder mixed with chillies). tasted fine but i wasn't sure if it was ok to eat, plus it was waaaayyyy too hot! LOL

When I made cumquat marmalade it did the same thing after a few days.  Did the chilli sauce do it straight away or after a while?

Perhaps it would be best to try with liquid glucose or rice malt syrup another time?

I have made sweet chilli sauce with glucose syrup and chilli paste.  .  You dont need much chilli paste as it is so strong about a small teaspoon and about half a cup of glucose syrup is enough mixed together into a small container.  keep in the fridge.

The chilli paste/sauce comes in very small bottles and is available at asian stores, supermarkets or some fruit markets and has no sugar in it, but does have some garlic and ginger, which gives a nice flavour.

    Enjoy!
