    I adapted this Date Loaf recipe and it turned out pretty well.  I substituted rice malt syrup for the brown sugar in the recipe and had to adjust the cooking time and oven temp (but I think that had more to do with my oven than the recipe).  My first attempt turned ok  but I tried to take the loaf out of the pan before it cooled so the bottom stuck.  Next attempt, I think I will put a sheet of baking paper on the bottom and leave it cool for  15 minutes.

    DATE LOAF

    Ingredients:

    1 cup chopped dates

    1 cup rice malt syrup

    60g butter or margarine

    1 cup boiling water

    1 ¾ cups self raising flour

    1 teaspoon bicarbonate of soda

    2 teaspoons vanilla essence

    Method:

    1.  Put chopped dates and rice malt syrup in bowl. Add sliced butter.

    2.  Pour in boiling water, stirring until butter has melted completely.

    3.  Add sifted flour and then bicarbonate of soda, mixing well. Add vanilla.

    4.  Bake in a well greased loaf tin in a moderate oven (160C fan forced) for 35 minutes.

    5.  Leave in the tin to cool for 15 minutes, otherwise you lose the bottom!

    Thanks for the recipe, think I'll skip the dates, though, one cup of dates is a hell of a  lot of fructose!

    Sorry. MT, I have to agree with Freda, dates are 33% fructose!!

    Even if you only have a thin slice, that's still gonna be more than your recommended fructose intake for a day, methinks. Great Idea, though, and sounds delicious!

    it does sound lovely but unfortunately dates have a fructose, 1 cup is about 170g, and has a total of 56g fructose.  You would only want a small piece cause I would imagine with the rice malt syrup it would be very sweet.

    Hello All, 

    I made this up the other day only I used a cup of fresh chopped apple and a handful of walnuts instead of the dates (which I don't like anyway).  It was a bit wet so needed about 2 cups flour but it turned out to be really yummy and moist.  Served with a spread of butter and a cuppa and my sister and mother thought it was great and they are both sugar eaters.  Will definitely be making it again.
