Orange Cake

    1 good sized orange

    6oz dextrose

    7oz butter

    3 eggs

    7oz self raising flour

    1tspn baking powder

    Cut orange into pieces (leaving skin on).  Put orange and dextrose into a food processor and whizz together (I leave the processor going while I prepare the rest).  Cut butter into chunks and add to the orange and dextrose in the processor, add eggs to this mix also, 1 at a time.  Once this is all mixed together remove the mixture into a large bowl and add the flour and baking powder, mix till combined.

    Pour mixture into a greased ring tin and bake at 150c for 35mins.

    Leave in tin for 15mins before removing.

    Ice with orange dextrose icing.

    Icing

    1 cup dextrose

    2 tspn butter

    Orange rind and juice (to taste)

    Boiling water

    Combine all ingredients in a bowl and mix, adding only enough boiling water to make the icing spreadable.


    This recipe makes a really moist cake, enjoy!

    OMG this cake is so good! Thank you for the recipe. My husband has made it twice and we always intend to make it through the week, but it never gets that far as everyone in the house wants a piece... even though they are not eating Fructose Free!

    That is great, it is my favorite cake so was soooooo pleased when it turned out as good as it did using dextrose.

    I made this cake. I didn't bother with the icing and it is a yummy, moist cake.

    Loved the cake it was deliciously moist and a huge hit with everyone both on and off Fructose :) Found the icing a bit sickly sweet though will leave it off next time and maybe just sprinkle with a little coconut.

    Hi there,

    I don't have a normal mixer, just a blender which I use for soups. Do you think this would work to mix this cake?

    I made this instead of a Christmas cake but added chopped walnuts and just put slight icing on it.  It was delicious.
