Just a thought, this kind of recipe that requires sweetness is probably best forgotten about. The apricots will either need to be canned or dried, neither of which is really suitable for sugar avoiders.
I read a blog a few months ago - can't remember the author - about quitting sugar. The writer was deliberately eating sugar to judge the effect it was having on him - he referred to this kind of thing as "Chicken Dessert."
There are lots of other nice ways to cook chicken!
