What did you do to survive Christmas fructose free?
I made:
the potato salad and swapped out the usual low fat mayo for a whole egg one (equal parts with sour cream.)
Chang's Crispy Noodle salad with 1/2 cup of dextrose instead of 1/4 cup castor sugar (adjust to taste)
Mini cheesecakes from the Christmas treats recipes - next time I'm going to try half lemon, half orange juice.
Chocolate crackles and marshmallows from the party recipes and the rolled biscuits from the cheesecake bases.Kids had great fun cutting biscuits and marshmallow with Xmas cutters. They decorated the biscuits (mostly dots and squiggles) with some piped icing sugar icing - there was so little icing per biscuit.
I also made the shortbread recipe from here too, but instead of doing it in a tin I rolled it into logs, refrigerated a bit, then sliced biscuits and baked them. I've actually decided I like them done this way better.
Then, for dessert instead of pavlova we had Eton mess with the Italian meringues from SweetPoison QP, whipped cream, strawberries sliced up and left overnight in a sprinkle of balsamic vinegar and a sprinkle of dextrose and the strawberry topping swirled over the top.
Not bad considering I was the only fructose free person present :)
