    Re cooking oils:

    • Rice-bran oil is a no-no.
    • For low temperatures use extra-virgin olive oil . . .  the cheap stuff has all sorts of baddies in it.
    • For high temperatures, I'm not sure, but imagine David would recommend lard. Check it in "Toxic Oils".

    I find it impossible to locate ghee these days.

    I've found Ghee at Woolworths, as well as at the Central Market here in Adelaide. Sometimes it's in the fridge and sometimes in a tin on the shelves.  You could try an Asian or Indian grocery if there's one near you?  Good luck

    I tink olive oil is fine for normal frying, but not for hihg-temperature frying. But it shold be extra-virgin olive oil, not the blended type.

    I did get some Ghee in a bottle once and it had many additives.

    I used to buy Allowrie ghee in a block but I don't see it around anymore.

    You can make your own ghee but it is a tad expensive.
