Any wheat flour is OK, and a few bought Spelt breads come up OK in David's books, but is there a problem with spelt flour?

It's just a form of wheat flour which grows in poor quality soils. It's probably specially grown to appeal to kinky dieters these days.

Or maybe it tastes better? I'm no baker but we tend to buy spelt loaves for the flavour.
