    I've just found a fructose friendly recipe for caramel slices - it uses 85% dark chocolate. I can't find anything about the fructose content in the chocolate - can anyone help me?

    Chocolate containing 85% cocoa is usually about 25% sugar so about 12% fructose.

    I indulge myself with a few grams of 70% on Friday and Sunday  nights while watching TV. It runs about 35-40%% sugars or up to 20% fructose. Makes you realize how pervasive it is, eh!

    i have an interesting recipe from my grandma from when i was little...

    1 or 2 eggs separated

    mix the yolks with the glucose powder till light colored

    add 1 tsp of pure cacao ( not the sweet stuff...)

    beat up the egg whites till stiff peeks form and fold into it the chocolate mix,gently.

    It is like a chocolate mouse

    Thanks for that - was there a quantity for the glucose?
