How Much Sugar?

What am I going to do with all my blackcurrants?!

Hi there, I am in need of some help.

I am growing blackcurrants on my allotment and they are nearly ready to pick.  Usually I make blackcurrant jelly, pretty much half and half the juice and sugar.  Obviously don't want to do that now, but what can I do that will preserve anything I make?  I don't have room in my freezer for the juice so I can store it until I am ready for it.

Any ideas would be very much appreciated.

    Thanks

    Hi
what about just freezing them whole to use has you need them, you can still make jam just use dextrose instead of sugar, but an only make enough to use in a week.

Look up Di Heath at Hungry Tums, she has a great ebook out for $10 and it has 2 jam recipes in it and you could substitute your blackcurrants.
Its a great book by the way.

Thanks very much for your replies.  I have frozen my berries to keep them "safe" and will check out the book.
