the cake sounds nice.. I'm just wondering what xylitol is? I've only just got the first book so I'm slowing working my way through it and haven't come across any alternatives to sugar yet!

I'm not sure if David's a fan of it, but it's a sugar replacement that looks and tastes like sugar, can be used as a 1:1 substitution in cooking, and actually reduces dental cavities rather than causing them. For some people it causes wind or stomach aches if you have too much. When I bake with it, I only use recipes that call for 1/2 cup or less. It costs a lot more than sugar. It doesn't have an aftertaste, and it can be made out of either birch (tree) bark, or corn cobs. It keeps its sweetness during baking. I've noticed that with dextrose and rice malt syrup, the batter is sweeter than the baked result, but not with xylitol. Sometimes I grind it and use it instead of icing sugar. Hope that helps!
thanks.. that's great information,

Hi, Robyn & Lara......I just Googled Xylitol and found this link, which if you read all of it, doesn't give it a good rap at all. Something I'll avoid, as I used to have a diarrhoea problem, now I'm pretty much fructose free, don't have much of a problem any more. Except, I suspect if I eat something with Sorbitol, Maltitol or Xylitol that's in the food I am eating. It's hard to pin this down to anything specific, as these things do take some time to pass through the body.
On the other hand, I've found something that has the opposite effect, which is good, & that is Chia Seeds. I bought some a few weeks ago, after reading all about them, thanks to people on the forums, and have just started using them last week, having a teaspoonful in my daily cuppa soup for lunch. Plus, I treated myself to a banana yesterday, boy, was that a shock when I got home & was told off by my DB, who was asking how much various veg cost, so I told him to look at the till tape/receipt My treat cost me $2.70!! I know I should have asked the check-out girl, before I bought it, but I just didn't think about it at the time. Given how poor we are at the mo', I was shocked! I used to pay that much for a whole kilo. I only mentioned this because I then had some banana on my once a fortnight cereal hit this morning & had some chia seeds on that too. In the soup, they go soft, but on the cereal they were a bit crunchy, even tho' I heated up the milk. I actually bought full fat cream yesterday, too. That was very hard to do, as I've been low fat everything for years now!! The cereal/banana/cream/hot milk really hit the spot & was very yummy. I had too much & felt a little bloated! That lasted me for almost 6 hours....then I had a late lunch, was only a little peckish.
Still losing weight, tho' if slowly.
Good luck with all the minefields out there, everyone....
