David this is for you mainly but if anyone else can answer that would be great.  I just bought a deep fryer and when I read the book it said not to use animal fat, solid oil or ghee, lard etc as it could be a fire hazard - only use liquid oil.  I thought David had said he used Ghee butter or lard in bulk from Woolworths and I would ike to use ghee butter, but which one would be best please and will one of them be OK to use?

If you want an answer from David I suggest you use the "Get In Touch" link on the Sweet Poison web page: http://sweetpoison.com.au/?page_id=29  He doesn't monitor these forum pages.

From memory you need high smoking-point oils but I think some of them  are polyunsaturated fats so there could be a problem.  Details can be found here http://missvickie.com/howto/spices/oils.html . You might need to check against David's list of "bad" seed oils on Page 159 of Big Fat Lies.

If your on facebook post the question to him there.  You will definitely need an oil with a high smoking point.  My deep fryer goes up to 190 degrees so check your manual of the highest temp your deep fryer goes up to wikipedia has a list of oils and their smoking points http://en.wikipedia.org/wiki/Smoke_point

Most of the "smoke point" oils are seed oils and therefore high in polyunsaturated fats which David advises against in Big Fat Lies
