    Have all of David's Books and have been on sugar free for  9 months now and am feeling great.

    However, I have just been diagnosed as highly gluten intolerant/borderline celiac and so have to cut out all the gluten in my diet.

    Have tried baking my own gluten free bread and other baking etc. Xanthan Gum is required in place of gluten.

    Zanthan Gum is used to bind, thicken and emulsify gluten free cooking and is essential for gluten free bread making in particular.

    It is made by fermenting corn sugar with a microbial called "Xanthomonas campestris".  I know corn sugar is a no no, but when  it is fermented is it OK?   Or what else can I do?

    Please could you give me some advise.    Thank you so much.

    Hi Bruna,

    I was diagnosed as a Coeliac in 2004 and have followed a very strict gluten free diet since then.
    I do buy a commercial bread from the supermarket,baker is Golden Hearth. For cakes,biscuits,& puddings etc I make my own using gluten free flours , & dextrose.
    I suggest also that you consider joining the Coeliac society,cost is about $50 a year-but well worth it for current Aust information,recipes & resources.

    Hi, I have been fructose free for a few months after reading David's books but have just been diagnosed as a Coeliac.
    Do you know if Glucose powder (dextrose) is gluten free? It says its derived from maize starch so i assume it is gluten free but other Googling tells me no.
    Do you guys know the answer?

    gluten-free diet is a diet that excludes foods containing gluten. Gluten is a protein found in wheat (including kamut and spelt), barleyrye, malts, and triticale. It is used as a food additive in the form of a flavoring, stabilizing, or thickening agent, often as "dextrin"

    I don't think glucose/dextrose has anything to do with wheat etc.  You may be thinking of "dextrin"

    Dextrose is free of gluten, its simply a kind of sugar.

    Xanthum gum is a polysaccharide, somewhat like the molucules found in beans that give you wind. Its part of what gives gluten free products their structure, which ordinary bakery goods get from linked gluten molecules. Its free of fructose entirely, although it seems to be an artificial product and I don't know what effects it might have on health and weight gain. Apparently it does cause stomach upset in some people, and there are some things that can be substituted for it, such as guar gum, locust bean gum, carrageenan etc.
