I made the tv chocolate slices and they took 35 minutes to cook not 15.

Then the icing. I followed the instructions I put a bowl over a pan of simmering water and i ended up with this crumbly mixture that I ended up plonking on the slices and trying to smooth over. The dextrose didn't seem to melt as explained in the recipe and so i added another twenty grams of butter. Still had a crumbly mess at the end of it?

Has anyone else made the icing and been successful.

    Thanks Gwendoline

I haven't tried making that recipe, but it does sound like the dextrose didn't melt, dextrose soaks up a lot of moisture which would explain why you got the crumbled mixture.  Sounds like that pan may not have been hot enough or you may not have left it on long enough.  Next time you could try putting the mixture in a saucepan directly over a very low heat.  Remember to keep stirring and as soon as it's spreadable take it off or you will get chocolate toffee.

I use the following recipe from somewhere on the site, for chocolate icing, we modified by adding milk which makes it smoother.

    Icing
    1/2 cup dextrose
    2 tablespoons cocoa
    20g melted butter
    hot water
Milk as required to make it smooth
(combine dextrose, cocoa and butter, add enough hot water to make it spreadable - is fairly coarse, then add milk)

    Thank you Gary

I made the icecream to day with ordinary cream and it is delicious.

I will try the icing your way. I definitely didn"t get it right.

I made the chocolate slice recipe. It actually cooked in 20  minutes, but my oven is very hot. For the icing I just added water to the glucose and cocoa until I had it to a fairly thinish consistency, then poured  it onto the still warm slices. Put it in the fridge and when cool cut it into squares. I found it delicious. Hope this helps.

    Thank you Beryl

Much appreciated. I've just finished off the slices today. So the next lot I  make I will try some of the suggestions i've received for the icing

It'a all a bit of trial and error I guess. The slices were still nice though. they tasted a lot like brownies.

    Cheers Gwendoline

I made both the TV slice and Beth's choc fudge squares (not on the same day!) and had this problem both with the icing AND the cake mix. I added water -quite a lot- to the mix until the TV slice became dough-ish and the fudge square mix became (IMO) cake-ish. The result was that they took twice as long to cook, but they did turn out more or less as I thought they should. I added water to the icing mix to get a consistency I could spread - it sets rock hard anyway so it worked out ok. Hadn't thought of adding milk to remove the graininess. I'll try that next time. I wonder if adding a very small amount of olive oil would keep the icing from becoming quite so hard... has anybody tried it?
I have also made the ice-cream, with a hand held whisk! It sets quite hard so I have to take it out of the freezer about ten minutes before I need it (or nuke it for about 40 seconds) Have had no complaints from kids or adults who have been ice-cream free for about eight months now :-D

    Hi Colleen

Sounds like you've worked it out quite well.

I made the ice cream with an ice cream maker and it still goes hard.

I will nuke it a bit next time. Thank you for putting me on to that

    Kind regards Gwendoline
