    While we are discussing dairy products, what about butter??? Is Nuttlex an acceptable substitute for people who are lactose intolerant? And I would love any tips on finding a way to spread butter without shredding the bread.

    Butter does not go rancid like margarine. You can leave it in the cupboard in temperatures up to say 25 °C for a week or more. Or you can take it out of the fridge 30 minutes before breakfast.

    Or you can buy butter mixed with about 20% oil (watch the type) Dairy Soft is one brand I can think of. It's spreadable [ more or less ] from the fridge.

    fructose wise nuttlex is fine, but it depends if your watching the oils your having because it contains 65% vegetable oil and I believe vegetable oil is bad.  I buy mainland buttersoft, it contains no oil whatso ever.  I usually take it out the fridge 5 minutes prior to needing it.  You need to watch the type of spreadable butter you buy because about 90% of them contain more oil then actual dairy however I find mainland buttersoft tastes the best and spreads the best.

    I use only butter.   In winter when it is cold, I grate it and put it into a container.

    "Vegetable oil" is often, but not always, palm oil. It is only "bad" because it conatins a lot of saturated fat. But if that doesn't worry you, go for it.

    If you know what oil is involved you can generally find it's composition at http://www.foodstandards.gov.au/consumerinformation/nuttab2010/nuttab2010onlinesearchabledatabase/onlineversion.cfm?&action=alphabeticalList&letter=S

    Or just Google "analysis palm oil"  or whatever. The Wikipedia articles are usually pretty authoritative.
