Hi Lyn,
I read somewhere, I thought the book, that caffeine works in the same way as fructose does with blood sugar swings. Caffeine forces the liver to release glycogen into the blood stream. The pancreas responds to the sudden rise in blood sugar by releasing insulin, the hormone which causes excess carbohydrates to be stored as fat. Within an hour or two, the result is a sharp blood sugar drop neding up in low blood sugar. That's when you think it's time for another cup of coffee and the whole cycle starts up again.
I know it affects the way the body absorbs nutrients within food, increases heart issues, creates gastrointestinal issues and affects both males and female in certain health issues. And personally, I was sick of being a slave to the "I need a coffee" feeling. Now I don't need anything to wake me up in the morning, or get me through the afternoon. I don't crave anything now (except maybe the homemade Nutella I made). I really appreciate that in my life.
