Golden syrup? Maple Syrup?

    Hey Dave,

     

    A bloke was trying to convince me there was a brand of mayple syrup or golden syrup which was on the side of good not evil.  He's read your book and has made plenty of positive changes to his diet which he's loving, but during the conversation he believes he's found a certain product in this area which is a great alternative to dextrose.

    Can this be true????

    Could it perhaps be malt extract? Malt extract can be used in place of most syrups...honey, treacle etc., but its sugar base is the perfectly good maltose.

    What about rice syrup??  I've been using rice syrup (Spiral Foods brand, somehow only 30% "sugars"), but now see in David's series of online articles on addiction that it contains fructose!  I don't know where I got the notion it was okay.  (I've lent both my books to others, so don't have them for reference.)

    Hi, everyone. I bought Rice Malt Syrup, Pure Harvest brand, & organic, then I just read that the only ingredient is rice, and the sugars per 100 g are 47%!!! To say I'm shocked is understating it a bit. I bought it to use in the anzac biscuit recipe.

    David, is the sugar from rice ok?  Should I be using Glucose Syrup instead? 

    Now I'm feeling so confused. I got the recipe from the other (Sweet Poison) forum. Yes, I do have the book, but the recipe was thee, so I just did the copy/paste thing & printed it out.  (sad)

    I have been using the rice malt syrup.  Somewhere in the forums it states there is no fructose in the Pure Harvest brand of rice malt syrup. I buy mine in the health section of Coles.

    Not all sugars are fructose SA - the sugar in the rice malt syrup is fructose free (according to the manufacturer when I wrote to them - I posted their response some time ago on the other forum). However by their very nature, all 'syrups' are sweet and high in calories whatever the sugar source.

    Use in moderation and it won't be a problem.

    So, just wishing to be perfectly clear: is rice malt syrup okay but rice syrup not okay?  Does it depend which brand you buy?

    Thanks, Janet. I looked, didn't find your post, but did find a set of posts which David got involved in, and, yes, it seems to be ok, David was a bit "hmmmm"  about it tho'.

    I do believe there was some question about being able to use this syrup when I joined the forum about 18 months ago. Some rice syrups or brown rice syrups were found to have fructose (??added or produced in manufacturing - not sure how), but the blurbs I read on rice malt syrup at the time seemed to indicate that it might be OK. I wrote to 'Pure Harvest' and stated that I had a severe intolerance to fructose and that I'd heard that some rice syrups had fructose - I then asked them to confirm if theirs did or didn't. I then posted the reply they sent which basically stated that there was no fructose in their rice malt syrup.

    Here is what one website said about Pure Harvest's syrup:

    'Rice malt syrup is a versatile sweetener made by culturing rice with enzymes to breakdown the starches and then cooking until it becomes a syrup. The final product contains soluble complex carbohydrates, maltose and a small amount of glucose. Great for using as a sweetener in baking'.

    Google 'rice malt syrup fructose' and there is a link to a sweet poison discussion - including the reply David got from Pure harvest. There seem to be links here that others have posted - I've not bothered with them as I can get the Pure Harvest brand here at coles for less than $4 a bottle.

    Janet, I found what you wrote, but wasn't convinced, so e-mailed them myseld, here's what I got back :-

    Below I have enclosed the HPLC analysis of the rice syrup and hope this provides all the information that you require to determine whether or not this is a suitable product for yourself.

    Sugar Profile Naturally occurring in Rice Syrup.

    Rice Syrup 60DE                HPLC Analysis 

    Glucose (DP1)                =          28 - 32

                Maltose (DP2)                =          33 - 37

                MaltoTriose (DP3)           =          4 - 6

                MaltoTetrose (DP4)         =          2 - 4

                MaltoPentose(DP5)         =          2 - 4

                MaltoHexose (DP6)         =          2 - 5

    MaltoHeptose (DP7)        =          14 - 18

    No fructose!

    She also quoted the info on the label to me, as they did to you.  Anyone got any problems with this? Please let me know! 

    So, I'm convinced, (about 98% !)  I will definitely use it in my Anzac Biscuits. Have been holding off making them (that's my excuse etc)  trying to get my dearly beloved to make them, he loves baking/cooking, but hates measuring out the ingredients, so it looks like a joint effort, should be fun! haha...both of us in our tiny kitchen at the same time......well, not sure it's a good thing, on past experiences!!
