How Much Sugar?

    Hi there, 

    I need HELP!!!!! my 4 yo son has just finished the last of his nutella. WE have been sugar free now for 2 weeks, and now that the nutella jar is empty, I need a recipe!!!

    My son proudly washed out his jar and said to me "mum, thats for you to put my sugar-free nutella in!!"

    I have purchased Ground hazelnuts ready to go but just not to sure what else to add??

    Can you help??

    Hello Melinda, here's a recipe from SidKatie on the Free Sweet Poison Forum

    1 cup dextrose
    1/2 cup water
    2 cups hazelnuts
    1/4 cup cocoa powder
    1/2 tspn vanilla extract

    Prepare a baking sheet by lining it with baking paper.

    Combine the dextrose and water in a large saucepan.  Do not stir again during the cooking.  Cover and bring the mixture to a simmer over a medium heat for 2 minutes, or until the dextrose is completely dissolved.  Uncover and cook until the syrup turns a pale amber.  Be patient, this does take a while!  Swirl the pan gently and continue to cook until the syrup darkens to a medium amber colour.  Be careful not to cook for too long, as it will burn quickly.

    Pour the caramel onto the lined baking sheet.  Tilt to spread the caramel as thinly as possible.  Let it harden completely, around 15 minutes.
     
    When the caramel is completely cool, break it into pieces and pulverise in a food processor.  Try to get the caramel as fine as possible.

    Add the nuts and process until they have blended.  Scrape down the bowl occasionally.  Be patient, the nuts will go from a fine meal, to a ball forming around the blade, to nut butter.  Add the cocoa and vanilla and process until smooth.

    Transfer the spread to an airtight container and store in the fridge.  For best results, stir the spread before using.

    As a quick thing you could just mix together natural peanut butter or cashew paste etc with some cocoa powder and dextrose.  I did that one day that I felt a bit desperate for chocolate.

    Even PB with cocoa and malt powder would be nice.
