coconut cake query

    Hi All

    I have been fructose free for a whole week and have been amazed to find that I have lost 3kg.....awesome.

    Anyway as a treat I just tried to make the coconut cake with cream cheese icing. I did think that the amount of butter listed to add at 250g seemed a bit much but did it anyway.... Well the cake was frying in the oven!

    Can I just get you to check that the amount of butter is not a typo?

    No not at all!! 
    It was far too greasy....but tried the ricotta cake at the same time and that was great !

    Hi Julia
    I made the Coconut meringue cake from the Sweet Poison Quit plan book and it only uses 95 grams of butter and is absolutely delicious. I made it as my contribution to a lunch with friends and they are not fructose free...........everyone loved it so much they all had seconds and the piece left over got spirited away into their fridge before we left.

    Hi Freda,

    I did the one from the recipe section here on this forum as I wanted the cream cheese icing version. Maybe I will give that one a try on your recommendation. Thanks!
