Hey, Nadine, did you mean this one?
SUGAR-FREE BANANA CAKE
INGREDIENTS
2 cups of wholemeal flour
2 teaspoons baking powder
1/2 tsp bicarb soda
60g butter or margarine
1 egg
1/2 cup finely chopped dates
4 ripe banana well mashed
1/3 cup milk
METHOD
Preheat oven to 180C
Sift flour, baking powder and bicarb soda
Cream butter and egg using electric mixer, add 1 x tblsp sifted flour mixture, mix well
Stir in chopped dates and mashed banana's
Fold in remaining flour mixture alternatively with milk
Spread mixture into greased loaf tin (I also lined my tin with grease proof paper), and bake for 30mins.
Test with skewer, cook for further 5-10mins if skewer not clean.
Additional Topping
I also added grated apple and a sprinkle of cinnamon to top cake mixture just prior to going into the oven which gave added moisture to the cake.
(My husband took sample of the cake to work next day, but did not mention that it was 'sugarless' - was apparently enjoyed by all and one guy who loves sweet stuff, had "three" slices!)
Hope that was the one, the only one I could find!! Someone replied about the dates, I guess it's your call. Not sure if leaving them out would affect the liquidity or anything else. Maybe Janelle could help here.
Cheers, Nadine, & good luck, let us know how it turns out......
Maybe try both......
