The coconut cake recipe

    Which I love to bits! I'm currently making one for Christmas dessert tomorrow..... the recipe says to use desiccated coconut but also says in brackets that they find shredded coconut preferable because of the texture that it gives it........ I've tried both and LOVE using shredded- I find the cake turns out better in general, not just texture wise...... HOWEVER, I just discovered:

    McKenzies Shredded Coconut- sugar per 100g = 38g

    McKenzies Desiccated Coconut- sugar per 100g = 6.3g


    !?!?!?!?!

    Devastated! What are the chances that the shredded coconut is all natural? Has anyone come across this?

    They say that their coconut can be bought at most health food shops.

    Bit late for this Christmas but might bear looking into afterwards.

    My husband is using Tamarind paste for a sauce for baramundi at the moment, he tasted it and found it very sweet. When I Googled it I found it has 30-40 gms of sugar in it which breaks down to 70% glucose and 30% fructose.
    I said I would pass on the sauce!!!

    Ohhh.  Never even thought to look at the nutrition panel of the shredded coconut, as I thought it would be the same as desiccated.  Will have to check it out when I get home.  I just buy home brand coconut.

    But................I had another look at the nutrition panel on my desicated coconut packet and saw 6% sugar on that, and the ingredients were only coconut and preservative.

    So I re Googled it and had another look, under the .5gram Fructose, I saw 5% sucrose which is, of course, table sugar, except there isn't any added sugar. So, I am assuming that coconut has sugar as part of its make up and I do notice they make coconut sugar from coconut.

    But David uses coconut in the recipe section of the Quit plan. I am supposing that as it's only a small part of these recipes that it doesn't matter too much.

    On the other hand, I made Sarah Wilson's coconut balls and did put on some weight after eating them and as they are 90% coconut and coconut oil, it must be that this concentration of coconut is not a good thing....................for my body anyway. I didn't use any sweetener at all in them, not Stevia nor dextrose nor Rice malt syrup, so it must have been the coconut.............................Sigh.

    Secretly hoping someone could tell me it was all natural sugar :-)

    It's all good, I'll just use desiccated from now on.

    I was upset about the McKenzies Shredded Coconut too.  A few days ago I went to get some desiccated coconut and there was a Woolworths homebrand Shredded Coconut.

    McKenzies Fine Desiccated Coconut  1.5g per serve, 6.0g per 100g

    Woolworths homebrand Shredded Coconut  1.5g per 25g serve, 4.0g per 100g

    I'm only a few days into my Fractose Free lifestyle - so still trying to find time with 3 little boys under my belt to learn the methods and understand labels.
