Geraldines' Ginger Beer Recipe

    I made up the ginger beer recipe and it was undrinkable. To be perfectly honest, it was the most disgusting thing I have ever made. We couldn't even stand to smell it. Could anyone offer any suggestions. I made it to the recipe exactly. It seemed to have an awful lot of yeast in it. 30 grams. Is this a typo in the recipe? I have made normal ginger beer in the past and know how it should smell and taste, so know that it is completely different to store bought. I'm sure the recipe works somehow, but I would just like to get some pointers here please, Geraldine.

    This is not ginger beer per se, sadly, but I have made this very successful ginger cordial based on a composite of online recipes, which is very refreshing on a hot day with soda water, ice and a wedge of lime.  Serving suggestions I haven't tried include making it up with hot water on a cold day, or adding to iced tea or a gin & tonic.

    • 2 cups powdered glucose (or to taste)

    • 2 cups water

    • 1 pce (3 inches) ginger, peeled and chopped

    • 2 tsp cream of tartar

    • zest & juice of 1 lemon or lime (up to 1 cup)

    1. In a medium saucepan, bring glucose, water, ginger, cream of tartar and zest to a boil, stirring occasionally, for about 5 minutes or until glucose has dissolved.

    2. Add juice and return to the boil.

    3. Remove from heat and set aside to cool.

    4. Strain mixture through a fine mesh sieve into a clean bottle. (Cool in the bottle if using glass.) Makes approx. 1½ litres. Keep refrigerated, until ready to use, up to 2 weeks.

    Thanks Olivia, your recipe sounds delicious and easy too. I will give that a go. My husband and I both love ginger beer and this seems like a good alternative. I especially love soda water and my mouth is watering thinking of it with ginger cordial in it. Thank you :)
