This is not ginger beer per se, sadly, but I have made this very successful ginger cordial based on a composite of online recipes, which is very refreshing on a hot day with soda water, ice and a wedge of lime. Serving suggestions I haven't tried include making it up with hot water on a cold day, or adding to iced tea or a gin & tonic.

2 cups powdered glucose (or to taste)

2 cups water

1 pce (3 inches) ginger, peeled and chopped

2 tsp cream of tartar

zest & juice of 1 lemon or lime (up to 1 cup)

In a medium saucepan, bring glucose, water, ginger, cream of tartar and zest to a boil, stirring occasionally, for about 5 minutes or until glucose has dissolved.

Add juice and return to the boil.

Remove from heat and set aside to cool.

Strain mixture through a fine mesh sieve into a clean bottle. (Cool in the bottle if using glass.) Makes approx. 1½ litres. Keep refrigerated, until ready to use, up to 2 weeks.
