How Much Sugar?

    Hello all,  was out to dinner with some friends tonight and my friend asked me why do I not use honey as it is a natural sweetener.  In all honesty I had tosay I did not know.  My question is do we, and if not why not?  I will be catching up with her next week so if anyone can answer I will pass it on.  Thanks

    The reason "why not" is that honey is 45% fructose, only 5% less than cane sugar (sucrose).  If you search these posts you will find reference to some substitutes, like Organic Rice syrup and Malt Syrup. 

    And beware the term "natural" sugar - it's what the dietitians call fructose and often say "Oh fruit's all right - it's natural sugar". As if sucrose  is somehow unnatural!

    Thanks John, that is what I thought and I use those others (never did use much honey anyway) but didn't like to presume without some backup.  Catherine
