I just bought from Woolworths Saunders Malt Extract. The ingredigents just say "Extract for Malted Barley", is this ok to eat  -  is it fructose free?

    Thanks,

    Danielle

this is what I found on the free forum site

SUGARS CONTAINED IN SAUNDERS MALT EXTRACT
    Approx.

    Fructose        2%
    Glucose         8%
    Sucrose         2%
    Maltose        44%
    Maltotriose   12%

so basically it's 3% fructose which is acceptable (total would be about 6g sugar per 100g being 3g of fructose), but depends on how much your having per day, I couldn't see a problem with it but couldn't imagine you'd need or want too much.

Maltotriose is a trisaccharide comprising three molecules of glucose bonded together. So it's kosher. Therefore your "total" of baddies would only be 2% fructose which is OK.  It no doubt has a malty flavour which is not like honey. I'm still going for the Rice Malt Syrup. It's not as sweet as honey, but it does look like it. Glucose syrup is yuk!
