Rice Bran Oil

    Hi 

    I am wondering if rice bran oil is ok to have. In David's books it is only mentioned once as a seed oil but doesn't appear in any charts or discussions further in the book.

    Rice bran oil is an absolute no no. It's classed as a seed oil because, like seed oils the chemical process used to extract the oil from the rice is pretty awful. Also, like seed oils, its Omega 3 to Omega 6 ratio is very off. There is a chart near the back of the book showing the oils and their omega 3 to 6 ratios and recommends keeping to the left of the chart. I can't remember which page the chart is on as I am overseas at the moment, but I think it's around page 245 or so.

    And David does say to avoid all seed oils except linseed (flax) oil.

     If you want to fry, use a saturated oil like coconut oil, lard or beef fat. We actually use duck fat too as it's saturated and makes a nice flavour, especially on oven baked potatoes.

    If you have smoke alarms, I recommend using the coconut oil outdoors or in the oven as it is a very smokey oil and when we used it indoors to fry tempura, it set off every smoke alarm in our house at once!!!
